Zoey's opened in Manchester, Vermont on August 1, 1991 The opening concept was incredibly simple. Make everything you sell, from the breads, to the cookies, to the honey mustard, to the tabouli, etc.
Manchester is a small town of 2,500 people in southwestern Vermont. Periodically, the town is saturated with tourists, yet the success or failure of any business depends on local support. Without that, any business is doomed.
Prior to opening Zoey's, the consensus was that Manchester could not support another restaurant, especially a ‘lunch only' restaurant since there were 18 establishments that, at the time, were serving lunch. Zoey believed differently.
Research showed that no one in Manchester was baking their own bread. Oh yes, they all said ‘Fresh Bread Baked Daily', but upon examination, what was really happening was the bread was frozen, proofed, then baked. Nobody was baking a full loaf of fresh bread from scratch.
We began with that concept, and to this day it continues. Today, Zoey's dominates the lunch trade in Manchester. Zoey's is the predominate lunch force in central Vermont. A lot of restaurants have tried to emulate Zoey's, but they don't execute. Year after year the word of Zoey's spreads.
