starsApricot Cranberry Nut Bread
Makes 1 Loaf

2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons vegetable oil
1 1/4 cups milk
1 tablespoon + 1 teaspoon grated orange peel
1 cup chopped walnuts
3/4 cup dried apricots- chopped fine
3/4 cup sundried cranberries

Method:

Preheat oven to 350 degrees. Grease the bottom only of a 9x5x3 inch pan. Combine all dry ingredients in a bowl and mix thoroughly. Add the vegetable oil, milk and the egg and mix well until batter is smooth, about 30 seconds. Fold in the orange peel, chopped nuts, apricots and sundried cranberries and pour the batter into the loaf pan. Bake the bread about 1 hour or until a wooden pick inserted into the center comes out clean. Let cool slightly then loosen the sides from the pan and remove. Let cool before slicing. Serve sliced Apricot Cranberry Nut Bread with softened orange butter( recipe follows) for a special treat on Christmas morning. Enjoy! This bread keeps up to 1 week covered and in the refrigerator.

Orange Butter: Soften 1/2 cup butter and place into a mixing bowl. Add 1 tablespoon fresh orange juice and 1 teaspoon grated orange peel and whip the butter until well incorporated and the butter is light and fluffy. (compound butters such as this freeze very well wrapped tightly in plastic wrap)
